The rules of Vegas eating

  • Book two nights ahead. The famous rooms sell out; everything else seats walk-ins.
  • Off-Strip is the arbitrage. The same chef quality costs 30–50% less 15 minutes east.
  • Lunch is the hack. Celebrity restaurants run half-price set menus midday.
